Had breakfast a couple of hours ago, and have the stock on cooking, well, simmering on the stove. About 12 cups of water, plus the deglazed liquid that I put in a container last night is in the pot, and of course, the bones and aromatics, I just added salt, peppercorns, parsely etc to the pot, clamped the lid on, and it's been going for a while,
